Pumpkin Cookies

This recipe was from the Advance newspaper many, many years ago! This is the recipe I’ve been making for as long as I can remember! It’s easy and if you make them small, they are 1 point on weight watchers! I figured that out one year! They are cake like cookies. They are easy to make and oh, so yummy!

1/2 cup butter

1 1/2 cup sugar

1 cup pumpkin, canned (not pie filling)

1 egg

1 teaspoon vanilla

2 1/2 cups flour

1 teaspoon baking powder

1 teaspoon baking soda

1/2 teaspoon salt

1 teaspoon nutmeg

1 teaspoon cinnamon

1/2 cup diced roasted almonds.

1 cup chocolate chips

Cream butter and sugar together until light and fluffy. Beat in egg, pumpkin, and vanilla. Mix and sift flour, baking powder, baking soda, salt, nutmeg and cinnamon. Add to creamed mixture and mix well. Add almonds and chocolate chips. Mix thoroughly. Drop by teaspoon onto well greased sheets. Bake at 350 for 15 minutes or until lightly browned. Remove from cookie sheets while still warm and cool on racks. Makes about 6 dozen. Enjoy!
