Pumpkin Bundt Cake

This is such a fun cake to serve and very easy to make. I always struggle with decorating, but I think it turned out ok!

If you don’t have 2 bundt pans, you just need to plan ahead so you can make two cakes in the same pan. Spray your pan really well. You will need to buy 2 cake mixes. You can pick any favor you like but it’s fun to pick a fall one – like a funfetti or spice. You make the cake mix as directed on the box. Cool it for 15 minutes and remove from pan. Let cool completely. Mix the second cake mix according to box directions and cool for 15 minute before turning it out.

To make the pumpkin, you place one cake upside down (round side down) on a serving tray. If you need to, trim the cakes so there is a flat surface on both so the cakes will frost together. If you cant find orange frosting (sometimes they have it as a seasonal item) you will need to buy white or buttercream, or whatever you like, and color it orange. If you can find orange food color that works, but you can also use yellow and red. It takes a lot of food coloring to create a nice orange color. Spread frosting on top of first pumpkin and place second one on top to make pumpkin shape. Frost the pumpkin with remaining frosting. I always find that I don’t have enough frosting, so I would suggest 3 cans. Thats just me though, I like a lot of frosting, so I end up not having enough to cover the cake.

Frost so you have the groves going down so it looks like a pumpkin. Frost an ice cream cone with chocolate fudge frosting and set on top as a stem. You can use remaining fudge frosting to make face, or color frosting yellow. Put frosting in a bag and snip the corner to draw face. Use candy corn for teeth. Buy green fruit candy slices or sugared jelly candy to make leaves. You can roll it out and cut leaves with a knife or scissors.

Keep in mind you made 2 cakes so this serves a lot! Recipe says 24 people.
