Pumpkin Spice Cheesecake Bites

One of my favorite people and biggest blog fans sent me this recipe to make so I made them for a Halloween party he was hosting!

They were very easy to make and the recipe makes 28 bite size bites so it’s not too many.

You need to buy a Spice Cake Mix. I found it at Meijer not in the baking aisle, but in the holiday center aisle with other fall items.

You need to heat treat the cake mix first. (This is something I’ve never done before, but I’ve heard you should do this with all flour.) It’s not hard. You just put the mix in a microwave safe bowl and heat in two 30 second intervals. Stir in between. Allow mix to thoroughly cool.

In another bowl, mix the pumpkin puree and cream cheese with a hand mixer for about 2 minutes until mixture is smooth.

Mix the cake mix into the pumpkin mixture until well incorporated. Tightly cover and chill for 2 hours.

Make 28 one tablespoon size balls out of the dough. Melt white almond bark in microwave. Cover a cookie sheet with parchment. Dip each ball into the white chocolate and sprinkle with pumpkin pie seasoning.
