Pumpkin Scones

I had heard my neighbor had a great recipe for pumpkin scones so I asked her if she would send it to me. The next day the recipe and 2 pumpkin scones were on my front porch! She’s the best! They were so good, I had to make a batch for my family!

You start by mixing the dry ingredients. Add cold butter. (I froze mine and then grated it into the dry ingredients). You want the butter in incorporate so batter is crumbly. In another bowl, whisk pumpkin, egg and half and half together until blended. Fold into dry ingredients until just combined. Put dough on a floured surface to form into a long rectangle 3/4 to 1 inch thick. Cut into triangles. I use a scone pan so I just put equal amounts of dough into each scone cup. Bake for 15 minutes until brown around the edges. Allow scones to cool. I wait about 1o minute and then take them out of the pan. Cool on wire rack.

Make powdered sugar glaze and spice glaze. Frost each scone with powdered sugar glaze and then allow to dry for about 10 minutes. Then drizzle spice glaze on top. I missed that I was supposed to drizzle and I frosted. oops!! The spice frosting is so good that I didnt mind having extra on each scone! Next time I’ll remember to drizzle since it looks so pretty!

These have great flavor and are a wonderful scone! I like to make them smaller that’s why I used my pan that made 16 scones. My other pan makes 8 and I thought those were too big. Make yours any size you like! Enjoy!
