Pumpkin Espresso Bundt Cake

There are so many Fall recipes to try! This one from King Arthur caught my attention because I had espresso from King Arthur. I thought it would be a great morning treat!

It was pretty easy to make and tasted amazing!

Like most recipes, you combine the liquid in one bowl and the dry ingredients in the other. Then you mix to combine. Make the filling in a third bowl. You grease a bundt cake, and pour about 1/3 of the batter on the bottom of the pan then sprinkle with 1/2 the filling. Pour another third of the batter then sprinkle with the rest of the filling and cover with the remaining batter. You bake for an hour. Let cool and then brush with a glaze made of coffee, sugar and rum. It does not make it taste like alcohol – it’s worth using the alcohol. Let the glaze dry a bit before serving. I served with whipped cream. It was delicious – pumpkin flavor was good and the espresso and rum were not overwhelming! Since this was easy and unique – and yummy! I’d definitely make again! Enjoy!
