Pumpkin Chocolate Chip Muffins

This is a great recipe to make one batch of muffins. The flavor is amazing, and the only problem you’ll have is trying to NOT eat them all!

It makes 12 good sized muffins. Sometimes I use my mini muffin pan to make more. Sometimes I use muffin liners and sometimes I spray the pans and don’t use them. I’ve also ordered bake in a cup liners – check them out – lots of fun designs! (Photo below) Bakeinacup.com. I use the sparkling sugar on these to make them look fancy and have an extra crunch too!

This is another easy recipe that you can whip up super fast. You mix the flour, sugar, pie spice, baking soda, baking powder and salt in a large bowl. You break the eggs into another bowl. Add pumpkin and melted butter and whisk to combine. Stir in chocolate chips and pour over dry ingredients. Fold together until moistened. Bake at 35 for 20-25 minutes.

1 2/3 cup flour

1 cup sugar

1 T pumpkin pie spice

1 t baking soda

1/4 t baking powder

1/4 t salt

2 eggs

1 cup pumpkin

1/2 cup melted butter

1 cup chocolate chips.

(Sometimes I add pecans too)
