Carmel Puffed Corn

This is a very dangerous and addictive recipe! It’s very easy to make too! The secret to this recipe is you don’t use pop corn, and you puffed corn! No kernels in your teeth but all the yumminess of Carmel corn!

You need 1 bag of puffed corn. (You find it in the chip aisle. Okie Dokie sells an 8 ounce bag. I couldn’t find any though so I used Meijer brand – their bags were 5 ounces, so I used 2.)

Dump puffed corn in a large bowl.

In a large saucepan melt 2 sticks of butter, 1 cup brown sugar and 1/2 cup white corn syrup. (You need a large saucepan for when you add the baking soda)

Bring to a boil for 2 minutes.

Remove from heat and add 1 teaspoon baking soda. Mixture will foam up. Mix well. Pour this over the puff corn and toss until all pieces are coated.

(I spray my pans with Pam first) Pour puff corn mix onto large jelly roll pan or two 9×13 pans.

Bake for 45 minutes, turning mixture every 10- 15 minutes.

Remove from oven and dump out on waxed paper to cool. I think it looks like chicken nuggets! 😂

Break apart and store in air tight containers or ziploc bags.
