Ricotta seems to be in everything these days! I saw so many post about Ina’s Blueberry Ricotta Breakfast Cake from Barefoot Contessa, I just had to try it!

Butter and sugar in one bowl and dry ingredients in the other.

Beat eggs and sugar until light and fluffy!

Add in the eggs one at a time, and then the ricotta, sour cream, vanilla, and lemon zest.

The batter will appear to look curdled.

Add dry ingredients slowly and do not over mix.

Add 1 1/2 cups of the blueberries.

Pour into prepared spring from pan.


Add the remaining blueberries on top and push them in just slightly.

It turned out perfect!

I sprinkled powdered sugar on it. It was amazing and oh so easy! Yes, you should try to make it! Enjoy!
