I came across this recipe from Chef Billy Parisi and I loved the name. It sound like Spring to me! After ready the description and ingredients, I just had to make it. It is described as carrot cake where you substitute bananas for the carrots.
It’s not hard to make, just has a lot of ingredients. I used yellow bananas, instead of waiting for them to ripen and it worked great. I also bought pineapple bits by mistake, but when I put them in the mixer, they crushed nicely. I bought the raw pecans and did roast them first – makes a big difference in the test for sure. I did cut parchment into a round circle to use on the bottom of the pan and I added 1/4 teaspoon all spice as suggested in the notes of the recipe. I only had two pans so I used two instead of 3 stated in the recipe. I did not reduce the ingredients as suggested in the notes. I was worried it might over spill, but it did not. They cake baked nicely but did not rise much.
The recipe calls for 2 batches of frosting. I did have leftover frosting because I wasn’t frosting 3 layers.
It was a huge success! Rave reviews from everyone! This may become a favorite lake recipe!
