Best Blueberry Muffins

This is a winner! I got this recipe from my good friend Carol Jewell . It’s an easy recipe and you can sub any fruit in for the blueberries. The easy added touch that makes everyone ask what store I bought them from is the sugar that you sprinkle on top. When you take a bite, you realize they have to be home made – they are just that yummy!

I used red cupcake liners to give them a red, white and blue Memorial Day look. You add the ingredients in order they are written. You don’t use a hand mixer. They only effort it takes is mixing the butter with the sugar. After that, you just mix. They are so good! Best served fresh, or if you eat them the next day, I suggest warming them up.

Best Blueberry Muffins – from the Grand Rapids Press (via Carol Jewell)

1/2 c. butter
1 c. sugar
2 eggs
1/2 c. milk
1 t. vanilla
2 t. baking powder 1/2 t. salt 2 c. flour
2 c. blueberries

In a large bowl stir in the ingredients listed in order by hand. (Don’t use a mixer) Fill paper muffin cups full to make 12 large muffins. Sprinkle with large granular baker’s sugar on the top before baking.

Bake 375 degrees for 30 minutes.
Adjust time if you make the muffins smaller.
