Summer Salad

I call this Red Bird Salad after the restaurant that sells a similar version of it. I like naming recipes by where or who I get them from since it brings back good memories when I make it.

You can start with any greens. I like to use spinach and arugula but today, I tried a new company called Superbloom Farms. It’s a new woman owned, hydroponic farm in Grand Rapids! She grows lettuce, herbs and edible flowers. I heard her speak so wanted to try her greens! WOW! It was very yummy, and very pretty too! Check it out if you live in GR. Right now she is in Cascade Meijer, Gordon foods, Bridge Street Market and a few others…but she is expanding daily.

Put lettuce in big bowl and toss with any fruit dressing. I like to buy Panera Fuji Apple. You can use any vinaigrette that you like. Toss the lettuce with dressing and put in bowls. Top with bacon bits, goat cheese, sugared pecans and a sliced pear. You can sprinkle cinnamon on the pear too. This is also good with sliced apples. Enjoy! It’s so yummy!
