There is something pretty cool about having bread dough rising on the counter on Easter Morning. It was even better when I rolled the dough into the cinnamon rolls.
The key to making good bread is to be in a good mood! Make sure you are happy and enjoy this yummy recipe!



Dissolve yeast and 1 teaspoon sugar in warm water. Cover and set aside in a warm place until bubbly. Into the yeast, stir in 1/2 cup sugar, ollive oil, eggs, salt, 2 1/2 cup flour and dry milk. Mix to a smooth batter. Stir in additional flour to make dough easy to handle. Turn dough on a lightly floured board. Knead adding flour if needed to form a smooth and elastic ball. Grease bowl lightly and cover dough. Place in a warm place and let rise to double its size, about 2 hours. Dough is ready if impression remains when touched.
Divide dough in half and roll out each half on lightly floured board into 15 x 12 x 1/2 inch rectangle shape. Brush dough with melted butter and sprinkle with cinnamon sugar. Roll dough as a jelly roll. Seal edges. (If baking bread, you are set; if making rolls, cut into 3/4 inch pieces. Use dental floss to do this for a clean, easy cut.) Place on lightly greased baking sheet. Cover and set in a warm place to rise for 1 hour. Bake in 375 oven for 10 – 12 minutes or until golden brown. Place on a rack to cool.. Makes two loaves or 24 rolls. While dough or rolls are still warm, drizzle with confectioners sugar glaze.
If streusel topping is preferred, sprinkle on the rolls before baking.
