I like to make a bunch of meals in one day and put them in the freezer so dinner time sit always decision time of what to make. I also like to food prep for my kids. They are all grown, but it is so helpful for them after a long day of work, to be able to pull out some of moms homemade food. It works well to do it all at once as many times recipes are too large for 2 people.
I start by collecting all my recipes together. You want to get all the groceries you will be needing all set. I like to organize the ingredients by recipe and dishes Ill need to make them.

Make sure you pull any meat out of the freezer to thaw so you are ready to go. I like to buy large quantities of meat at lower prices and wrap in small packages to store in the freezer.

Since many of my recipes call for chicken, I just bake a large tray of chicken breast. I season them real well and then cut up into bite size pieces.

I’m making a few quiches per my kids request. Trader Joes has a wonderful crust that I like to use!

I like to organize my recipes so I make things in an order that makes sense. I start with super easy ones so I can feel accomplished right away! The chicken curry is a favorite – my friend Michelle made it for me when I had my twins. Curry is very popular in Ireland too – I ate a lot of it when I was a student there. It’s not a lot of ingredients either. Cream of chicken soup, sour cream and curry to taste. I use a lot of curry since I love the taste! You mix it all together and put in a baking dish. Since Im freezing it, I wrap it at this point. When Im ready to bake it I melt a stick of butter and mix with a sleeve of crushed ritz crackers and then sprinkle with poppy seeds. You can eat by itself, or over rice or pasta. Its so yummy! When I make this for my son and daughter in law, I include directions on the package and give him a stick of butter, the poppy seed and the crackers. Its so helpful that when they pull it our for dinner, they have everything they need.

Quinoa is a favorite and so easy to make and freezes so well! I like to take a picture of it after I put everything in the pan, but before mixing because it’s so pretty!


This freezes well in one container, or in individual containers. My daughter likes to pull individual serving sizes out, sprinkle is with cheddar cheese and eat it with tortilla chips.

Meatloaf is always easy and yummy. This is a lean and green recipe I found that is yummy and healthy. Mexican Meatloaf.

Tomato quiche turned out so yummy! I learned the best way to freeze quiche is to stick it in the freezer with no wrap to have it set, then wrap it air tight with plastic wrap and then wrap with foil. Also, do not thaw before cooking. You will need to add 10-15 minutes to baking time but it turns out perfect!

The thing to remember when making meals for others is include good directions and any other ingredients they will need to make the finished product. Below is chicken parm wrapped and ready to go in the freezer.
