It is not easy to eat healthy, so I like to prep for it just like I would do if I was making meals for the freezer. I try to not buy a large quantity of vegetables and just commit to buying more every 3 – 4 days. I use the Tupperware fridgesmart containers and they work really well to keep vegetables fresh longer. You just need to set the 2 tabs according to what you are storing.
We like green leaf lettuce or romaine, broccoli, mushrooms, scallions, peppers and I like to add a fruit to have cleaned and washed and ready. I clean and chop and store everything so when it’s time to eat, I just need to measure out my salad. I do weigh my greens to make sure I’m getting enough of each vegetable. I do an half cup of 3 different vegetables. When I want to mix it up, I’ll do 1/4 cup of 4 different vegetables, but I stick with the 1/2 cup of lettuce. I then use 2 tablespoons of dressing.
By doing this food prep, I can easily mix up my salads and its easy to have a salad once or twice a day. Also, I like to buy vegetables that I can cook right before they go bad so it gives them an extra shelf life. For this reason, I’ll buy spinach sometimes instead of lettuce, but we do love our lettuce so we just focus on eating it up before it goes bad. The key is to not over buy for what you can eat so your always have fresh vegetables.
